The Parisian pastry chef Auguste Julien Chiboust was based on rue St Honoré. In 1840, he gave his name both to the wonderful St Honoré but also to his very particular cream, Chiboust cream or chibouste, which garnishes the center of St Honoré.

This cream is the very successful combination of a pastry cream and an Italian meringue. The whole thing gives a very light foam contrary to what one might believe. But to bring a little freshness, we will add some orange zest.
And to complete it all, it is traditional to lightly caramelize the cream before tasting.
